Yeast Pancakes (Pikelets)

    These are a different style of pancake that use yeast. They are great as a morning or afternoon tea when made in a small pikelet size.

    Serves: 6 

    • 1 egg
    • 4 tablespoons sugar
    • 1/2 teaspoon salt
    • 3 tablespoons vegetable oil, or butter
    • 2 cups warm water (or milk)
    • 3 cups flour
    • 1 teaspoon dry yeast
    • vegetable oil, for frying

    1. Beat with a mixer the egg, sugar, salt, oil and warm water. Sift flour, mix with yeast. Gradually add the liquid mixture to the flour stirring as you go.
    2. Cover the bowl with plastic wrap and put in a warm place to approach 45 - 60 minutes. Then mix the dough then leave for 40-50 minutes.
    3. Spread the prepared dough in a well heated frypan with a little oil. Fry over low heat until golden. Serve with cream and jam.
