Peel the potatoes then grate. Squeeze well to remove excess water.
Finely dice the onion then add to the potato. Pour the egg, flour, salt and pepper. Stir well.
Heat the oil in a hot frypan. Add the blinis with a spoon. Fry on one side several minutes until brown then turn to the other side. You can cook four to six at a time depending on the size of the frypan.
Rest the pancakes on a paper towel while cooking the next batxh.
Serve each pancake topped with a spoonful of cream cheese and a few strips of salmon.
