Chicken and Green Pea Soup

    Chicken, potatoes and green peas go together to make an easy and hearty soup kids will love. You don't even need to thaw the peas if frozen.

    Serves: 4 

    • 2 tablespoons olive oil, for frying
    • 2 chicken fillets, diced
    • 1 onion, diced
    • 4 potatoes, peeled and diced
    • 6 cups water
    • 400g green peas, fresh or frozen
    • salt and pepper, to taste
    • dill, as needed

    1. Heat the olive oil in a saucepan and brown the chicken. Add the onions and cook until soft.
    2. Add the potatoes and 6 cups water. Bring to a boil, season with salt, reduce heat and simmer 15 minutes.
    3. Add the green peas and simmer another 10 minutes, or until potatoes are done. Taste for salt and pepper. Serve, sprinkled with dill.
