A very simple recipe for pea soup, both vegetarian and vegan. If you like very tender peas, simmer half an hour longer.


Serves: 4 

  • 2 cups split peas, soaked
  • 2 potatoes, peeled and cubed
  • 2 carrots, grated
  • 1-2 onions, diced
  • a few cloves garlic, minced
  • 1-2 teaspoons dill
  • 1-2 teaspoons parsley
  • 2 bay leaves
  • salt and pepper, to taste

  1. Place peas in a saucepan and cover well with water. Simmer about 40 minutes, stirring occasionally.
  2. Add all the remaining ingredients, stir and simmer 15-20 minutes or until vegetables are tender.
