I had to make this when I found black chickpeas, but this simple and delicious soup is equally good with ordinary chickpeas.


Serves: 8 

  • extra virgin olive oil, as needed
  • 1 clove garlic
  • 1 sprig rosemary
  • 400g dried black chickpeas (or regular chickpeas), soaked overnight
  • 150g short pasta
  • salt and pepper, to taste

  1. Heat a splash of olive oil in a saucepan and gently brown the clove of garlic with the rosemary sprig.
  2. Rinse the soaked chickpeas, add to the saucepan and cover with cold water. Bring to a boil, reduce heat and simmer 90 minutes.
  3. Add pasta and salt to taste then keep simmering until pasta is done.
  4. Serve, garnished with pepper and a drizzle of olive oil.
