Smooth Pea Soup

    This smooth and brightly coloured soup is a perfect starter for a festive dinner party. Use fresh or frozen peas, either works.

    Serves: 6 

    • 1 teaspoon oil
    • 1 small onion, diced
    • pinch salt
    • 250g floury potatoes, peeled and cubed
    • 700ml water
    • 500g green peas, fresh or frozen
    • pepper
    • 50ml sour cream
    • 1 tablespoon water

    1. Heat oil in a saucepan and fry onion until translucent. Add salt, potato and some of the water. Simmer until potato is soft.
    2. Add peas and cook 2 more minutes (longer if using frozen peas). Add remaining water and puree with a hand blender.
    3. Season to taste with pepper (and more salt, if desired). Mix sour cream with 1 tablespoon water and stir into the soup.
