Pea Soup with Mint

    The simplest pea soup which can be made with either fresh or frozen peas. It's sweet and delicious and garnish with a little mint which goes very well with peas.

    Serves: 6 

    • 240ml milk
    • 720ml vegetable stock
    • 2 tablespoons butter
    • 2 tablespoons flour
    • 450g peas, fresh or frozen
    • salt and pepper, to taste
    • 1 dash white wine vinegar
    • a few sprigs fresh mint

    1. In a saucepan, heat the milk and stock together.
    2. Melt the butter in another saucepan, add flour and cook, stirring. Do not let brown.
    3. Gradually add the hot liquid, whisking constantly so no lumps form. Simmer 10 minutes over low heat, stirring occasionally.
    4. Add the peas and simmer 5 minutes. Puree the soup and season with salt, pepper and vinegar.
    5. Garnish with finely sliced mint.
