Lemon Lime Cheesecake Slice with Lattice Biscuits

    A nice, light, citrus cheesecake sandwiched between lattice biscuits and topped with whipped cream and strawberries. A good way to finish off a meal.

    Makes: 1 chhesecake

    • 2 packets Arnotts lattice biscuits
    • 250g butter, softened
    • 1 cup sugar
    • 250g cream cheese, room temperature
    • 1/6 cup lemon juice
    • 1/6 cup lime juice
    • 2 teaspoons gelatine powder

    1. Line a Swiss roll tray with baking paper.
    2. Lay lattice biscuits shiny side down on bottom of tray. Cut to fit.
    3. Using an electric mixer, cream the butter, sugar and cream cheese.
    4. Heat the lemon and lime juices and stir in gelatine. Cool slightly.
    5. Add to cheese mixture and beat until smooth.
    6. Spread the cheese mixture evenly over the biscuits.
    7. Cover cheese with more of the biscuits shiny side up. Cut to fit.
    8. Refrigerate until set. Cut into slices.
    9. Serve with whipped cream and strawberries if desired.
