Coconut Herb Soup

    A beautiful green soup with peas, potatoes and a coconut herb sauce. Any leftover sauce is perfect for fritters or potatoes.

    Serves: 4 

    • 2 tablespoons vegetable oil
    • 1 large onion, diced
    • 4 cups boiling water
    • 1 large potato, peeled and diced
    • 600g frozen peas
    • 4 tablespoons coconut herb sauce (see below)
    • salt and pepper, to taste
    • a few drops lemon juice
    • Coconut herb sauce
    • 100g fresh coriander, chopped
    • 1 sprig mint, chopped
    • 2cm fresh ginger, peeled and finely diced
    • 3 tablespoons shredded coconut
    • 1 teaspoon lime juice
    • 1 clove garlic, crushed
    • 2 teaspoon cumin
    • salt, to taste
    • pinch sugar
    • 100ml water

      Coconut herb sauce

    1. Mix the coriander, mint, ginger and coconut in a bowl. Add the lime juice, garlic, cumin, salt and sugar. Mix in water and adjust seasoning to taste.
    2. Soup

    3. Heat the oil in the bottom of a saucepan and saute onions. Pour in the boiling water and add potato. Simmer 10 minutes.
    4. Add the frozen peas and cook 5 minutes. Add 4 tablespoons of the coconut herb sauce and turn off the heat.
    5. Blend with a hand blender and add salt and pepper to taste, plus lemon juice if you like.
