    Delicious pasta broth with aromatic spices like ginger, thyme, lovage and allspice. Even non-vegetarians will love this.

    Ingredients
    Serves: 8 

    • 3-4 allspice berries
    • 5-6 peppercorns
    • 2 bay leaves
    • 1 vegetable stock cube
    • 2 tablespoons Vegeta(TM) vegetable stock
    • 2 carrots, peeled and diced
    • 1 leek, sliced
    • 1 sprig parsley
    • 1 onion, peeled and diced
    • 1 stalk celery, diced
    • 2cm fresh ginger, minced
    • 1 pinch thyme
    • 1 pinch lovage
    • 250g pasta
    • diced parsley, to garnish

    Directions

    1. Fill a 5 litre saucepan about 3/4 full of water. Bring to a boil and add allspice, peppercorns, bay leaves, stock cube and Vegeta. Simmer 10 minutes.
    2. Add carrots, leek, parsley, onion, celery and ginger. Simmer 40 minutes. Add thyme and lovage.
    3. Meanwhile, cook pasta in boiling salted water until al dente. Strain and divide among 8 bowls.
    4. Strain out the stock and pour over the pasta. Add cooked vegetables as desired. Serve, garnished with parsley.
