A very simple cucumber and zucchini soup, delicious and vegetarian. it's super creamy without even the addition of cream.


Serves: 2 

  • 2 tablespoons butter
  • splash olive oil
  • 1 small onion, diced
  • 1 Continental cucumber, peeled and sliced
  • 2 small zucchini, peeled and sliced
  • 3 cups vegetable stock
  • 1 bay leaf

Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

  1. Heat oil and butter in a saucepan. Saute onion a few minutes, browning slightly.
  2. Add cucumber and zucchini and saute a few minutes. Add hot stock and bay leaf, bring to a boil, reduced heat, cover and simmer 20 minutes.
  3. Remove bay leaf. Puree soup in a blended then reheat and serve.
