Zucchini and Cucumber Soup

A very simple cucumber and zucchini soup, delicious and vegetarian. it's super creamy without even the addition of cream.

- 2 tablespoons butter
- splash olive oil
- 1 small onion, diced
- 1 Continental cucumber, peeled and sliced
- 2 small zucchini, peeled and sliced
- 3 cups vegetable stock
- 1 bay leaf

- Heat oil and butter in a saucepan. Saute onion a few minutes, browning slightly.
- Add cucumber and zucchini and saute a few minutes. Add hot stock and bay leaf, bring to a boil, reduced heat, cover and simmer 20 minutes.
- Remove bay leaf. Puree soup in a blended then reheat and serve.
