Cabbage and Spinach Soup

    Adding spinach at the end of the cooking time of this rich vegetable soup provides colour and nutrition. You can also add cooked barley for a little more substance.

    Serves: 4 

    • 4 tablespoons olive oil
    • 1 onion, finely diced
    • 1/2 head cabbage, finely sliced
    • 1 carrot, grated
    • 1 tomato, diced
    • 8 cups (2 litres) vegetable stock
    • salt and pepper, to taste
    • dried dill and parsley, to taste
    • large bunch spinach, washed
    • 2 cloves garlic, diced

    1. In a saucepan, heat the olive oil, add the onion and saute 5 minutes. Add cabbage, carrot and tomato and cook 5-7 minutes.
    2. Add the stock and bring to a boil. Season with salt, pepper, dill and parsley. Cover and simmer 30 minutes.
    3. Finally, add the spinach and garlic and simmer 5 minutes. Serve hot.
