Vegetarian Cabbage Soup

This is a very tasty vegetarian soup, perfect for Lent or for people watching their health. A lovely mix of vegetables.


Serves: 4 

  • 2-3 tablespoons sunflower oil
  • 1 onion, diced
  • 1/2 head cabbage, finely shredded
  • 1 carrot, grated
  • 5-6 cups vegetable stock (or water)
  • 2-3 potatoes, sliced
  • 2-3 tablespoons parsley, chopped
  • 2 bay leaves
  • salt, pepper and sugar, to taste

Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

  1. Heat oil in a frypan and saute onion, cabbage and carrot until tender, about 10 minutes. Season with salt.
  2. Heat the stock in a saucepan. Add browned vegetables, potatoes, parsley, bay leaves, salt and a little sugar.
  3. Simmer 15-20 minutes, covered, until potatoes are tender. Add pepper near the end of the cooking time.
