Banh mi are Vietnamese sandwiches commonly based on chicken though leftover pork would also work well. This would make a delicious lunch with only 214 calories per serve.
2 Vietnamese rolls
60g cooked shredded chicken
50g grated carrots
50g cucumber, thinly sliced
4 tablespoons coriander leaves
4 tablespoons Nuoc Cham (Vietnamese dipping sauce)
- Split rolls from top, but not all the way through.
- Fill with the chicken, carrot, cucumber and coriander leaves.
- Pour over the Nuoc Cham.
Use pulled pork, or any other cooked/cold meat of your choice in place of the chicken.
If preparing for a packed lunch or picnic, pour over the Nuoc Cham just before eating.
