Banh mi are Vietnamese sandwiches commonly based on chicken though leftover pork would also work well. This would make a delicious lunch with only 214 calories per serve.

Serves: 2 

  • 2 Vietnamese rolls
  • 60g cooked shredded chicken
  • 50g grated carrots
  • 50g cucumber, thinly sliced
  • 4 tablespoons coriander leaves
  • 4 tablespoons Nuoc Cham (Vietnamese dipping sauce)

Preparation:10min  ›  Ready in:10min 

  1. Split rolls from top, but not all the way through.
  2. Fill with the chicken, carrot, cucumber and coriander leaves.
  3. Pour over the Nuoc Cham.


Use pulled pork, or any other cooked/cold meat of your choice in place of the chicken.


If preparing for a packed lunch or picnic, pour over the Nuoc Cham just before eating.
