Garlic Prawn Fried Rice

    A beautiful light summer meal, fried rice with garlic prawns and green peas. A quick and easy dinner for the whole family.

    Serves: 4 

    • 1 1/2 cups long grain rice
    • oil or butter, for frying
    • 150g green peas
    • salt and pepper, to taste
    • 500g prawns
    • 2 cloves garlic
    • 1 bunch parsley
    • 1 tablespoon lemon juice

    1. Cook the rice until done, about 12-15 minutes. Peel and clean the prawns and dice the garlic and parsley.
    2. Heat the oil in a frypan or wok and fry the peas a few minutes. Add the rice and fry a few more minutes, seasoning with salt and pepper.
    3. Add the prawns, garlic and parsley. Sprinkle with lemon juice and fry a few minutes more. Remove from heat, cover and let stand a few minutes.
