Garlic prawns are simmered in a fresh tomato sauce, the perfect topping for pasta or rice. A great light dinner.


Serves: 6 

  • splash olive oil
  • 1 onion, finely diced
  • 3 cloves garlic, finely diced
  • 3-5 tomatoes, diced
  • 1 tablespoon tomato paste
  • 1 kg peeled prawns
  • sprig fresh dill (or a little dried)
  • salt and pepper, to taste
  • 1 bay leaf
  • fresh parsley, to garnish

  1. Heat the olive oil and fry the onion and garlic until transparent, 5-7 minutes. Add the diced tomatoes, tomato paste and a little water then simmer 15-20 minutes.
  2. Cook the prawns in boiling salted water along with a sprig of dill, pepper and the bay leaf about 5 minutes, or until tender.
  3. Drain the prawns to the tomato mixture to heat through, then serve sprinkled with parsley.
