Garlic Prawns Pasta

    A little lemon zest in the cooking oil adds a beautifully light refreshing touch to this seafood pasta dish with garlic prawns.

    Serves: 1 

    • 100g spaghetti
    • good olive oil, as needed
    • zest of 1 lemon
    • 1 garlic clove, crushed
    • 10 medium cooked peeled shrimp (fresh or frozen)
    • salt and pepper, to taste
    • handful fresh basil, chopped

    1. Cook the pasta in plenty of boiling salted water. Drain and set aside, reserving a little of the cooking water.
    2. Meanwhile, heat a splash of olive oil in a frypan over low heat. Add zest and saute gently about 5 minutes. Strain the oil and return to frypan.
    3. Add the garlic and shrimp and cook 3 minutes, stirring occasionally. Season with salt and pepper to taste.
    4. Add the pasta with a splash of the cooking water. Stir well so everything is coated with the lemon oil. Serve with fresh basil.
