Chocolate Banana Bread

    A sweet and delicate banana bread made from ripe bananas with flecks of walnut and dark chocolate.

    Makes: 1 loaf

    • 3 very ripe bananas
    • 50g butter, melted
    • 2 eggs, separated
    • 200g sugar
    • 300g flour
    • 2 teaspoons bicarb soda
    • 250g walnuts, finely diced
    • 100g dark chocolate, finely diced

    1. Preheat oven to 180 degrees C. Grease a loaf tin.
    2. Mash the bananas and combine with melted butter and egg yolks. Mix well. Beat the whites until fluffy, add the sugar and continue beating until sugar has dissolved.
    3. In a mixing bowl combine the flour and bicarb soda, then add the mashed bananas and mix well. Gently fold in the stiff egg whites. Add walnuts and chocolate and mix gently.
    4. Transfer batter to the loaf tin and bake 50 minutes. Let cool and serve with chocolate sauce and sliced banana to garnish if desired.
