Under a delicious crunchy crust is a hot molten chocolate heart. This dessert is made in 8 individual ramekins, perfect for a dinner party.


Makes: 8 ramekins

  • 7 eggs, separated
  • pinch salt
  • 230g sugar, separated
  • 200g dark chocolate
  • 150g butter
  • 6 tablespoons heavy cream

Preparation:20min  ›  Cook:10min  ›  Ready in:30min 

  1. Preheat oven to 200 degrees C and butter 8 small ramekins.
  2. Beat the egg whites until very firm with a pinch of salt and 50g of the sugar. Beat the egg yolks with remaining sugar until pale.
  3. Melt the chocolate with the butter in a double boiler. Beat in the egg yolks. Fold in the egg whites. Pour batter into ramekins.
  4. Bake 7-10 minutes. The top should be set but inside still runny. Serve warm with a a little cream.
