If you love chocolate chip biscuits, why not double them up and make cream filled sandwich biscuits?


Makes: 24 small biscuits

  • Biscuits
  • 225g unsalted butter, softened
  • 100g caster sugar
  • 50g brown sugar
  • 2 eggs
  • 2 teaspoons vanilla essence
  • 280g flour
  • 1/2 teaspoon baking powder
  • pinch salt
  • 300g chocolate chips
  • Filling
  • 225g cream cheese
  • 180g icing sugar

  1. Preheat oven to 180 degrees C.
  2. In the bowl of an electric mixer, beat butter and sugars until creamy. Add eggs and vanilla, then the flour sifted with baking powder and salt. Add chocolate chips and mix without overmixing.
  3. Place spoonfuls of dough 5cm apart on an ungreased baking tray. Bake 8-11 minutes. Let cool 5 minutes on the tray.
  4. Beat together the cream cheese and icing sugar until smooth. Use to sandwich 2 biscuits together.
