These chocolate madeleine biscuits are best made with very dark chocolate. You will need a madeleine biscuit tin.


Makes: 20 madeleines

  • 150g dark chocolate
  • 80g butter
  • 5 eggs, separated
  • 120g sugar
  • 150g flour

Preparation:10min  ›  Cook:10min  ›  Ready in:20min 

  1. Preheat oven to 190 degrees C.
  2. Melt the chocolate and butter together.
  3. Beat the egg yolks with the sugar until combined. Add the chocolate and mix. Sift in the flour and mix well. Beat the egg whites until stiff and fold in.
  4. Butter a madeleine tray and spoon in the batter. Bake 5-10 minutes, watching carefully so they lightly brown but do not burn.
  5. Let cool before unmolding.
