Chocolate Sandwich Biscuits

    Two delicious chocolate biscuits sandwiched together with heavy buttercream filling... just try them!

    Makes: 10 sandwich biscuits

    • Biscuits
    • 1 egg
    • 50g icing sugar
    • 75g butter
    • 100g cooking chocolate
    • 200g flour
    • 1/2 teaspoon baking powder
    • pinch salt
    • Filling
    • 75g softened butter, diced
    • 100g icing sugar
    • 1 teaspoon vanilla extract
    • 1 tablespoon warm water

    1. Preheat oven to 180 degrees C and grease a baking tray.
    2. Beat egg and sugar together until pale. Melt butter and chocolate together in a saucepan over low heat. In a bowl, combine flour, baking powder and salt.
    3. Pour the melted chocolate into the egg/sugar mixture and then gradually mix in flour. Mix well.
    4. With your hands, form 20 biscuits 3-4cm wide and 1cm thick. Place on a baking sheet and bake 10 minutes. Cool on a wire rack.
    5. To prepare the filling, beat the butter and sugar together with an electric beater. With a wooden spoon, stir in the vanilla and water.
    6. When biscuits have cooled, sandwich together with the cream filling.
