In a medium saucepan, combine water, butter, sugar and salt and bring to the boil. Remove from heat and add all the flour. Beat in eggs one at a time, mixing well after each addition.
Lightly grease a baking tray. Place a tablespoons of dough 3cm apart. Bake 20 minutes and cool on a wire rack.
To serve, cut each profiterole in half. Melt the chocolate in a double boiler (or the microwave). Place a spoonful of ice cream in each profiterole and replace the top half. Drizzle with melted chocolate, garnish with a little whipped cream and serve immediately!
