Chocolate Pudding with Basil

    Fresh basil adds a smooth an interesting touch to this special chocolate pudding. If you don't like basil, the pudding is fine without it too.

    Serves: 10 

    • 1 cup sugar
    • 1/2 cup water
    • 2 tins milk (use the empty condensed milk tin)
    • 10 large fresh basil leaves
    • 1 tin condensed milk
    • 3 eggs
    • 3/4 cup cocoa powder

    1. Preheat oven to 180 degrees C.
    2. Make a syrup with the sugar and water until it starts to caramelise and pour into a ring tin.
    3. In a saucepan, bring the milk to the boil with the basil leaves. Once boiling, remove from heat, cover and let infuse 10-15 minutes. Discard basil leaves.
    4. Place infused milk in a blender with condensed milk, eggs and cocoa and blend until just combined.
    5. Pour into the ring tin, cover with aluminium foil and baking paper and bake in a water bath 1 1/2 hours. Remove and let cool completely before serving.
