Shiny Chocolate Glaze

    This glaze turns as smooth as a mirror and is perfect for fancy cakes. For the best smooth effect, use it as soon as it is ready.

    Makes: 1 serving glaze

    • 1 1/2 tablespoons cocoa powder
    • 8 tablespoons milk
    • 1 tablespoon flour
    • 150g sugar
    • 30g unsalted butter

    1. In a bowl, mix the cocoa powder with 3 tablespoons warm milk until smooth.
    2. In a small, thick bottomed saucepan, heat the remaining 5 tablespoons milk with the flour. Stir well to get rid of any lumps.
    3. Add the sugar, stirring constantly with a wooden spoon. Once the sugar has dissolved, reduce heat and add the butter. When butter melts, add the cocoa mixture. Simmer 5-10 minutes on low heat until thick.
    4. Strain through a sieve and use immediately.
