    These yummy chocolate sandwich cookies are held together with nougat and then dipped in chocolate glaze. Is that too much chocolate?

    Ingredients
    Makes: 25 cookies

    • 250g flour
    • 135g butter
    • 90g sugar
    • 1 teaspoon vanilla sugar
    • 4 hard boiled eggs
    • pinch cinnamon
    • 125g grated chocolate
    • nougat or jam, for filling
    • chocolate glaze

    1. In a food processor, combine flour, butter, sugar, vanilla sugar, eggs, cinnamon, and grated chocolate until a smooth dough forms. Cover with foil and chill 1 hour in the refrigerator.
    2. Preheat oven to 180 degrees C. Grease baking trays or line with baking paper.
    3. Roll out the dough on a floured surface until quite thin and cut out cookies with a round cutter. Bake on trays 10 minutes then cool on a wire rack.
    4. Melt the nougat over a water bath. Use to glue two cookies together (alternatively, you can use jam).
    5. Melt the chocolate icing over a water bath and dip each cookie sandwich in halfway. Let dry on baking paper.
