My mother loves pineapple and I bake her this heart cake every year on Mother's Day. It is also great for Valentine's Day or when you just want to say I love you.


Serves: 6 

  • 150g butter
  • 150g sugar
  • 1 teaspoon vanilla essence
  • 3 eggs
  • 3 tablespoons milk
  • 1/2 lemon, juiced
  • 250g flour
  • 2 teaspoon baking powder
  • 150g chopped pineapple
  • icing sugar, to present

  1. Preheat oven to 180 degrees C. Grease a heart shape cake tin.
  2. Beat the butter, sugar, vanilla and eggs until frothy. Add the milk and lemon juice. mix in the flour and baking powder.
  3. Drain any juices from the pineapple, then fold into the batter.
  4. Pour the batter into the cake tin. Bake in preheated oven for about 45-50 minutes.
  5. Remove the cake from the tin then let cool. Dust with the icing sugar to serve.
