Mini Chocolate Almond Tarts

    Individual little crustless chocolate almond tarts, soft and tasty. Best served soon after being taken from the oven.

    Makes: 4 tarts

    • 150g butter, melted
    • 150g sugar
    • 3 eggs
    • 80g flour
    • 1/2 teaspoon baking powder
    • 100g dark chocolate
    • 80g almond meal

    1. Preheat oven to 180 degrees C and butter 4 small tart molds.
    2. Combine butter with sugar until creamy and smooth. Add the eggs one by one, beating after each. Add the flour and baking powder and mix well.
    3. Melt the chocolate in a double boiler and stir into the batter along with 60g almonds. Mix well. Pour into molds and sprinkle over the remaining almond meal. Bake 20 minutes or until they test clean.
