Russian Easter Bread

    The recipe might seem a little complicated but it's not hard at all to bake your own kulich - a sweet Easter bread similar to panettone.

    Serves: 12 

    • 60g fresh yeast
    • 2 cups milk, warmed
    • 1 kg flour
    • 7 eggs, separated
    • 1 1/2 cups sugar
    • 1 tablespoon brandy
    • 300g butter, melted
    • 3/4 teaspoon salt
    • 1 cup blanched almonds, crushed
    • 1/2 cup raisins

    1. Dissolve the yeast in warmed milk, let stand 10 minutes, then add half the flour, mix and set in a warm place to rise. In a separate bowl beat the egg whites.
    2. In another bowl, beat egg yolks with sugar and brandy. When the dough has doubled in size, combine with the egg yolks, melted butter, remaining flour, salt and beaten egg whites.
    3. Mix until smooth, then cover with a tea towel and let rise again. When risen punch it down and mix in the almonds and raisins.
    4. Butter and flour a panettone mold or large coffee tin. Place the dough in to fill it half way. Let rise in a warm place 1 hour. Preheat oven to 180 degrees C.
    5. Brush the top of the cake with egg yolk and bake bread 50-60 minutes, depending on the shape of the mold. Do not open the oven in the first 20 minutes.
