This is a quick healthy recipe that the kids will love. You can add as little or as many vegetables as you like. I tend to use carrot, zucchini, mushrooms, red capsicum, peas. I have even used fresh beans sliced up.
*This dish is nice with the chilli... I do recommend if serving to kids - just reduce the amount.
I tend to add the peas about 5 minutes before the rice is done to avoid them going mushy.
While basmati rice is a healthy option you could use brown rice or even quinoa for a different flavour.
