Spanish Style Rice

    This is a quick healthy recipe that the kids will love. You can add as little or as many vegetables as you like. I tend to use carrot, zucchini, mushrooms, red capsicum, peas. I have even used fresh beans sliced up.

    Serves: 4 

    • 1 tablespoon olive oil
    • 1/2 large brown onion, diced
    • 1 clove garlic
    • 500g lean beef mince
    • 1-2 chorizos, sliced
    • your choice of vegetables chopped/diced
    • 1 cup basmati rice
    • 1 cup water
    • 2 x 400g tins diced tomatoes
    • 2 teaspoons mixed herbs
    • salt and pepper, to season
    • 1 bay leaf, optional
    • 1 teaspoon chilli flakes, optional
    • tasty cheese or Parmesan, to serve

    1. Heat oil in large fry pan and sauté onion and garlic.
    2. Add mince and chorizo and cook until browned.
    3. Once meat has browned add hard vegetables (carrots, capsicum etc). When sweated and slightly softened add the other vegetables.
    4. Add rice to vegetables and meat and mix through.
    5. Add water and tinned tomatoes. Season with herbs, salt and pepper (and bay leaf and chilli flakes, if using) and mix through.
    6. When liquid reaches a boil reduce heat and cover. Leave to simmer for about 20 minutes or until liquid is gone and rice is cooked.
    7. Serve hot topped with cheese.


    *This dish is nice with the chilli... I do recommend if serving to kids - just reduce the amount.


    I tend to add the peas about 5 minutes before the rice is done to avoid them going mushy.


    While basmati rice is a healthy option you could use brown rice or even quinoa for a different flavour.
