Hot Cross Buns for Easter

    There are lots of variants on hot cross buns, most of them contain some mixture of dried fruit. Some have the cross made out of flour, I prefer glazed.

    Makes: 8 buns

    • 1 1/2 teaspoons dried yeast
    • 4 tablespoons warm water
    • 1 teaspoon sugar
    • 200g flour
    • 1/4 teaspoon salt
    • 25g sugar
    • 50g butter
    • 25g raisins
    • 25g sultanas
    • 25g candied fruit, diced
    • 1 egg, beaten
    • Glaze
    • 2 tablespoons milk
    • 2 tablespoons water
    • 2 tablespoons sugar

    1. Dissolve the yeast in the warm water with 1 teaspoon sugar.
    2. In a bowl, combine flour, salt and 25g sugar. Add butter and knead it in with your fingers. Stir in the raisins, sultanas and candied fruit.
    3. Add the yeast mixture and egg and mix well. Knead well with your hands then let rise in a warm place, covered, 45-60 minutes.
    4. Divide the dough into 8 parts and shape into balls. Place on a baking tray lined with baking paper and let rise 15 minutes. Meanwhile, preheat oven to 220 degrees C.
    5. When ready to bake, cut a shallow cross on each bun with a knife. Bake 15-20 minutes.
    6. Make the icing by combining milk, water and icing sugar in a saucepan. Simmer 2 minutes then brush on the buns while they are still warm.
