You can sometimes find bottled eggnog in big supermarkets - if you do, try making this fabulous cake for Easter or Christmas.


Makes: 1 cake

  • 5 eggs
  • 250g icing sugar
  • 2 teaspoons vanilla sugar
  • zest of 1 lemon
  • 1 cup (250ml) vegetable oil
  • 1 cup (250ml) eggnog
  • 125g flour
  • 125g potato flour
  • 2 teaspoons baking powder
  • breadcrumbs, as needed

  1. Preheat oven to 180 degrees C.
  2. In a bowl, combine eggs, icing sugar, vanilla sugar and lemon zest. Beat until creamy.
  3. Stir in oil and eggnog. Add flour, potato flour and baking powder and mix into a smooth batter.
  4. Grease a ring tin and sprinkle with breadcrumbs, then pour in batter.
  5. Bake 1 hour or until a skewer tests clean.
