Crispy Cherry Biscuits

Delicious little crispy biscuits, each with a half glace cherry in the centre. Elegant and good for guests.
125g margarine or butter
60g caster sugar
2 drops vanilla essence
125g plain flour
5-8 glace cherries, halved
- Preheat oven to 180 degrees C. Cream the margarine and sugar until light and fluffy. Stir in the flour and the vanilla.
- Roll into little balls and flatten slightly. Press half cherry into the centre of ball, and place on a greased baking tray.
- Bake for 10-15 minutes. Cool on a wire cooling rack.
Used different ingredients.
Try adding about 50grams of slivered almonds to the mix as an optional extra. A very nice biscuit either way though.
