Easter Bunny Cake

    An Easter bunny cake always looks great on the Easter table. If you prefer you can cover it with chocolate glaze instead of white icing.

    Ingredients
    Makes: 1 cake

    • 50g butter
    • 1 tablespoon sugar
    • 1 teaspoon vanilla sugar
    • 1 egg
    • 1 tablespoon rum
    • 1 tablespoon milk
    • 1/2 teaspoon baking powder
    • 1 tablespoon cocoa
    • 75g flour
    • To Decorate
    • 1 cup icing sugar
    • lemon juice, as needed

    1. Preheat oven to 180 degrees C.
    2. Cream the butter in a mixing bowl. Beat in sugar, vanilla sugar and egg. Add rum and milk, then finally add the baking powder mixed with the cocoa and flour.
    3. Butter the rabbit-shaped mold and pour in the batter. Bake 35-45 minutes. Let cool in the mold a few minutes before removing and letting cool completely.
    4. Make the icing by combining 1 cup icing sugar with enough lemon juice to make a thick icing. Spread on the bunny.
