Rice porridge, sometimes called congee, is a very popular dish in many Asian countries, particularly when you are feeling under the weather.


Serves: 4 

  • 300g rice
  • 3 litres water
  • 150g white fish fillets, cut into small chunks
  • 2 teaspoons chicken stock powder
  • 1/2 teaspoon pepper
  • 10g chopped parsley
  • 20g green onions, sliced
  • 20g fresh ginger, slivered
  • 1/2 teaspoon salt

Preparation:10min  ›  Cook:50min  ›  Ready in:1hour 

  1. Wash the rice and place in a saucepan with the water. Cook over high heat 10 minutes, then turn heat to medium lower and simmer 30 more minutes.
  2. In a bowl, combine the fish, chicken stock powder, pepper, green onions and ginger and let marinate 15 minutes.
  3. Stir the fish into the porridge. Simmer 20 minutes. Add parsley and salt to taste and serve.
