Healthy Pumpkin Scones

    These are a healthy version of pumpkin scones that I make, they even look healthy, but don't worry they still taste great!

    Serves: 4 

    • 2 cups (230g) wholemeal spelt flour
    • 1/2 teaspoon ground cinnamon
    • 2 teaspoons baking powder
    • pinch salt
    • 1 cup (250g) pumpkin puree or mashed pumpkin
    • 60g butter melted
    • 1 tablespoon honey or pure maple syrup
    • 1 cup (100g) oats

    1. Preheat the oven to 180 degrees C. Sprinkle the base of a baking tray with oats or spelt flour.
    2. In a bowl combine the flour, cinnamon, baking powder and salt. In another bowl combine the pumpkin, butter and honey.
    3. Scatter the oats on the bench. Combine the flour with the pumpkin mixture and combine until a soft dough forms. Transfer to the oats and flatten, sprinkle with additional oats.
    4. Using a cutter or glass dipped into flour cut the scones and transfer to the prepared baking tray.
    5. Bake in the preheated oven until golden brown and cooked through. Serve warm.
