    A simple salad recipe that combines pumpkin and walnuts of a bed of baby spinach and a simple honey dressing.

    Ingredients
    Serves: 4 

    • 500g pumpkin
    • Dressing
    • 1 tablespoon fresh lemon juice
    • 1 tablespoon honey
    • 2 tablespoons extra virgin olive oil
    • 2 teaspoons wholegrain mustard
    • To Serve
    • 150g baby spinach leaves
    • 80g walnuts

    Directions
    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Skin, seed and cook the pumpkin as preferred, baked, roasted, fried or even leftover. Cut into serving size.
    2. Dressing: Combine the lemon juice, extra virgin olive oil, mustard and honey in a ceramic bowl then whisk to combine. Season with salt and pepper.
    3. To Serve: In a bowl combine the pumpkin, spinach and walnuts, then drizzle with the honey lemon dressing.
