Spicy Noodles with Pork

    Quick, appetising and easy to make spicy noodles that are ready in 20 minutes. Pickled mustard is available in tins in Asian markets.

    Serves: 2 

    • 4 tablespoons soy sauce
    • 3 tablespoons vinegar
    • 2 teaspoons sesame oil
    • 2 tablespoons chilli oil
    • 300g fresh noodles
    • hot chicken stock, as needed
    • 2 tablespoons vegetable oil
    • a few Sichuan peppercorns
    • 200g pork loin, cut into strips
    • 50g zha cai (Chinese pickled mustard vegetable), sliced
    • 1 teaspoon salt
    • sliced spring onions, to garnish

    1. In a bowl, combine 2 tablespoons soy sauce, vinegar, sesame oil and chilli oil and set aside.
    2. Stir Fry:

    3. Cook the noodles in boiling water until tender, a couple of minutes if fresh. Drain and place in two bowls and add a little hot chicken stock.
    4. Heat vegetable oil in a wok and fry the Sichuan peppercorns until fragrant. Remove the peppercorns with a slotted spoon and reserve.
    5. Add pork to the hot wok and stir fry until just cooked through. Add pickled mustard and stir fry 1 minute. Add remaining 2 tablespoons soy sauce and salt then stir well.
    6. Place the pork and mustard on the noodles and drizzle with the sauce. Crush the Sichuan pepper and use to garnish with the spring onion.
