Chow Mein with Shrimp and Chicken

    It sounds unusual but sprinkle this stir fry with a pinch of sugar before eating, it gives it a very appetising kick.

    Serves: 4 

    • 1 teaspoon salt
    • 1 teaspoon oil
    • 300g prawns, peeled and deveined
    • 100g green cabbage, diced
    • 100g carrots, diced
    • 100g zucchini, diced
    • 60g mushrooms, diced
    • 100g broccoli, diced
    • 400g egg noodles
    • 2 tablespoons oil
    • 1 tablespoon minced garlic
    • 300g skinless, boneless chicken, diced
    • 2 tablespoons chicken stock powder
    • 2 teaspoons salt
    • 3 tablespoons soy sauce
    • Garnish
    • sesame oil
    • sugar

    1. Bring a large saucepan of water to a boil and add salt and 1 teaspoon oil.
    2. Blanch the prawns, cabbage, carrots, zucchini, mushrooms, broccoli and egg noodles until tender. Remove, rinse with cold water and drain well.
    3. Heat two tablespoons oil in a wok. Saute garlic until fragrant. Add the chicken and stir fry until browned. Add the prawns, vegetables and noodles and stir fry until heated through.
    4. Season to taste with chicken stock powder, salt and soy sauce, mixing well. Drizzle with sesame oil and serve with a sprinkling of sugar.
