Coconut Potato Soup

    There's nothing quite as satisfying as a simple potato soup, but this recipe has coconut milk added for extra creaminess.

    Serves: 2 

    • 650g potatoes, peeled and diced
    • 2 onions, diced
    • 2 cloves garlic, diced
    • 50ml oil
    • water, as needed
    • salt and black pepper, to taste
    • 200ml coconut milk

    1. Heat the oil in a saucepan and saute the onion and garlic for a few minutes. Add the potatoes and water just to cover. Bring to a simmer.
    2. Once the potatoes are tender, remove from heat and puree in a blender or with a stick blender. Put back on the heat.
    3. Season with salt, pepper and coconut milk. Simmer a few more minutes and serve.
