Cucumber, Tomato and Avocado Soup

    This soup is equally good serve hot or cold. If serving it cold, stir in the avocado and cream after it has chilled.

    Serves: 8 

    • 4 tablespoons butter
    • 1 cup onion, diced
    • 4 tablespoons flour
    • 4 cups tomatoes, peeled and diced
    • 4 cups cucumbers, peeled and diced
    • salt and pepper, to taste
    • 4 cups chicken stock
    • 1 avocado, peeled and diced
    • 1 cup thickened cream

    1. Melt the butter in a deep saucepan and add the onion. Cook until soft then sprinkle with flour. Add the tomatoes and stir well.
    2. Add cucumbers, salt and pepper to taste. Stir in the stock and simmer 25 minutes.
    3. Blend the soup in batches and return to the heat. Add the avocado and stir. Stir in the cream and serve hot.
