If you are making a curry or biryani with chicken stock, try using this stock instead. It is delightful and fragrant.

Makes: 6 cups stock

  • 1 chicken carcass (neck, back, bones, wingtips etc)
  • water, as needed
  • salt, to taste
  • 2 cinnamon sticks
  • 4 cardamom pods, smashed

Preparation:5min  ›  Cook:45min  ›  Ready in:50min 

  1. Combine all ingredients in a saucepan, adding water to cover.
  2. Bring to the boil and simmer, uncovered, 45 minutes. Strain the stock.
