Chicken Stock from Scraps

    You can sometimes get chicken scraps like necks and backs for next to nothing at the butcher or supermarket. Make your own stock and you will be glad you did.

    Makes: 7 cups stock

    • 1 1/2 kg chicken necks, wings and backs
    • 10 cups water
    • 1 onion, peeled
    • 2 stalks celery
    • 2 sprigs parsley
    • salt, to taste
    • 10 black peppercorns

    1. Place all ingredients in a large stockpot and bring to the boil. Simmer, uncovered, 1 1/2 hours, skimming foam as necessary.
    2. Strain the stock through a fine sieve or cheesecloth. Return to the boil and boil rapidly until reduced to about 7 cups. Skim off any fat and chill or freeze until needed.
