What to do with leftover ham? Make the old classic ham and pea soup! A little wine and cream add a delicious note.
4 cups (1 litre) beef stock
150g cooked ham, diced
150g green peas
3 tablespoons white wine
salt and pepper, to taste
creme fraiche or sour cream, to serve
- Melt butter in a saucepan and stir in the flour. Add the stock and bring to a simmer while whisking.
- Add the ham an dpeas and simmer 10 minutes. Add wine and salt and pepper to taste. Serve, garnished with a dollop of creme fraiche.
