Quick Chicken Stock

    Homemade chicken stock is a great thing to have on hand for making delicious soups and sauces. It keeps a long time in the freezer.

    Serves: 6 

    • 1 whole chicken
    • 3 litres water
    • 1 carrot, roughly chopped
    • 1 parsnip, roughly chopped
    • 3 stalks celery, roughly chopped
    • 1 onion, peeled and halved
    • 2 bay leaves
    • a few black peppercorns
    • salt, to taste

    1. Rinse the chicken and cut into large pieces. Place in a saucepan with the cold water, bring to a simmer and skim the foam.
    2. Add the carrot, parsnip, celery, onion, bay leaves, peppercorns and a little salt (you can always add more later). Simmer 1 1/2 hours, then strain the stock. Keep the chicken meat for another use.
