Quick Salmon Chowder with Tinned Salmon

    This soup is fast and easy to prepare with tinned salmon. I prefer it blended smooth but you can leave it chunky if you like.

    Serves: 4 

    • 3 cups water
    • 3 potatoes, diced
    • 2 tablespoons vegetable oil
    • 1 onion, finely diced
    • 1 carrot, grated
    • 200g tinned salmon
    • salt and pepper, to taste
    • fresh dill, to taste
    • 200ml cream

    1. In a saucepan, boil the 3 cups water. Add the potatoes.
    2. Heat the oil in a frypan and saute the onion a few minutes until translucent. Add the carrot and fry a few more minutes.
    3. Add the browned onion and carrot to the soup. Add the salmon, removing any bones. Season with salt and pepper and simmer until potatoes are tender.
    4. Pour the soup into a blender, add dill to taste then blend until smooth. Return to the saucepan to reheat. Pour in the cream, bring to a simmer and immediately remove from heat. Enjoy!
