Pumpkin Scone Recipe

    This is a simple Aussie pumpkin scone recipe using good old Aussie pumpkin as the main ingredient. Perfect for a morning tea.

    Serves: 8 

    • 50g sugar
    • 50g margarine
    • 1/2 cup cooked mashed Queensland Blue pumpkin
    • 1 egg
    • 1/2 cup milk
    • 2 1/2 cups plain flour
    • 3 teaspoons baking powder
    • 1 teaspoon bicarb powder

    1. Preheat the oven to 200 degrees C. Prepare a baking tray by dusting with flour.
    2. Cream the sugar and margarine. Add the mashed pumpkin (I like to mash mine with a fork so it is still a little chunky rather than turning into a puree). After stirring in the pumpkin add the egg and milk. Combine well.
    3. Sift the flour, baking powder and bicarb slowly into the the pumpkin mixture, while mixing into a soft dough.
    4. Turn the dough out onto a floured surface then roll out to about 2cm thick. Cut out round scones using a biscuit cutter or floured glass.
    5. Place the scones on a tray and brush with additional milk. Bake in the oven for 15 minutes.
