Spinach and Pumpkin Salad

This is a simple salad that I make when feeling like being healthy and avoiding meat for a while.

Serves: 1 

  • 2 slices pumpkin
  • 2 handfuls baby spinach
  • 1/4 cup pre-cooked couscous
  • spring onion, sliced
  • balsamic dressing
  • salt and pepper, to taste

Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

  1. On a bbq cook the two slices of pumpkin until cooked through. Dice.
  2. In a bowl combine the spinach, couscous, and spring onion then top with the warm pumpkin.
  3. Drizzle with the balsamic dressing and season to taste with salt and pepper.
