Warm Pork and Pumpkin Salad

    This is a nice singles or couples dinner that can be cooked in one pan or on the BBQ. I use a comercial dressing but you could make your own if you wanted.

    Serves: 1 

    • Warm Components
    • 2 slices of pumpkin
    • 1 pork steak, or boneless chop
    • Cold Components
    • baby spinach leaves
    • raspberries
    • avocado, diced
    • spring onion, sliced
    • raspberry dressing

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Warm Components: Heat a frypan to a medium heat and start to fry the pumpkin, turn every 5 minutes or so. When starting to soften add the pork steak.
    2. Cook the pork and pumpkin until cooked to your preferred doneness. If the pumpkin is overcooked it can get soft and mushy.
    3. Dice the pumpkin and pork.
    4. Cold Components: Combine the spinach, raspberries and avocado in the serving bowl.
    5. On top add the pumpkin, pork and spring onion. Drizzle with the raspberry dressing and serve immediately.
