Nothing complicated - grated cucumbers seasoned with garlic, olive oil and dill, served mixed with yoghurt as a refreshing chilled summer soup.


Serves: 2 

  • 2 large cucumbers, peeled and seeded
  • 2 tablespoons olive oil
  • 1 clove garlic, crushed
  • salt and pepper, to taste
  • fresh dill, chopped, to taste
  • 2 cups yoghurt

Preparation:10min  ›  Extra time:1hour chilling  ›  Ready in:1hour10min 

  1. Finely chop the cucumbers, or simply grate on a coarse grater.
  2. In a bowl, combine cucumbers, olive oil, garlic, salt, pepper and dill. Mix well and place in the refrigerator.
  3. When ready to serve, stir through the yoghurt until evenly mixed. Taste for salt and serve.
